INGREDIENTS
1 Scoby purchased or grow komucha scoby from a bottle
1 Cup sugar (sugar needed to feed the fermentation)
5 Organic black tea bags (or 1 tablespoon loose tea)(can use green tea, but not the first batch)
1 Gallon Jar to store kombucha
2 Fresh Ginger (3-inch pieces) Vary to taste.
Glass bottles for storage
2 Cups brewed Kombucha

DIRECTIONS how to make kombucha recipe 1 gallon

1. Everything must be sanitized. I cannot stress this enough. When dealing with fermenting anything it is crucial every piece is clean and sanitized. Wash your hands and all equipment used before you begin. I like to run everything through my dishwasher before I make and bottle. My husband and I brew our own beer and make our own wine. So we are very familiar with making sure everything is super clean and sanitized.
2. Measure out 3.5 quarts of water and place in a pot on the stove. Heat the water until boiling. Some people insist on using distilled water. Boiling filtered water from our fridge has worked perfect for me, and I have been making this for nearly a year.
3. Turn off the heat and add 1 cup of sugar. Stir the sugar until it is completely dissolved. Then add 5 organic black tea bags. This is the brand I use and for the first fermentation from your homemade scoby you should use black tea for a strong brew. Cover the pot so not much water escapes. After you have brewed the kombucha you can then use a combination of black and green tea. But you should have at least a 3 black tea and 2 green for later brews
4. Wait for the tea to cool. It must cool to room temperature before adding the scoby. If not you risk damaging your precious scoby you grew from scratch. Once it is completely cooled, pour the tea into the clean 1 gallon jar and add 2 cups of your previous brew. Then add the homemade scoby to the top.
5. Store in the 1 gallon glass jar with a cloth (cheese cloth-doubled) covered lid with a rubber band. This allows the kombucha to breathe without getting any additional bacteria or fruit flies in your brew. Store in a dark closet that remains cool through out the day and someplace no one will touch it. It needs to remain still to grow the scoby and create the bubbles.
6. Allow to brew for at least 7 days. It may take 10-12 days, depending on the temperature in your home. During the winter months, I allow a little longer brew. Right now 8 days is the perfect time for the flavor and creating the carbonation.

IMPORTANT: The bacteria in kombucha is considered a probiotic. But, if not prepared properly harmful bacteria or mold grows on your scoby Green or gray spots is a sign of mold. Another sign of mold when your scoby is dull and fuzzy looking. NOT glossy. Discard the scoby and start over. TIP: Use cane sugar or white, not honey, stevia, raw or coconut sugar. When shopping for kombucha, it may be best to choose brands that contain under 4 grams (1 teaspoon) of added sugar per serving. TREND: Add turmeric & black pepper Ratio: 100/1. How much? 1 tsp. of turmeric per gal. + a pinch of black pepper. You should not be able to taste the turmeric.

I make my leftover Thai turkey every year now. First, I make sure I buy a large enough turkey so I can get about a pound (.46 kilos) of leftover, tasty turkey meat. I have two great meals from one turkey every year. Too tired to cook? Freeze leftover turkey and make this delicious, nutritious meal another day! Make it once and you will enjoy the tantalizing flavours with rich creamy coconut milk. Your family will love it!

2 tablespoons avocado oil
1/2 cup chopped shallots
1 large red bell pepper, cut into strips
2 medium carrots, trimmed and shredded
2 teaspoons minced garlic
3 tablespoons easy home-made  or jarred Thai Red Curry Paste
2 tablespoons fish sauce
2 teaspoons palm sugar or light brown sugar
1 (14-ounce) can coconut milk
1 pound left over turkey, cubed or strips
3 tablespoons chopped Thai basil leaves
3 tablespoons chopped fresh cilantro leaves
Cooked jasmine rice, accompaniment
Sprigs fresh cilantro, garnish
INSTRUCTIONS
1. In a large wok or saute pan, heat the oil over medium-high heat.
2. Add to the pan shallots, saute a few minutes
3. Add to the pan garlic and saute a few more minutes.
4. Add to the pan shallots, bell peppers, and carrots.

5. Stir-fry until soft (2 to 3 minutes).
6. Add the curry paste and cook, stirring, until fragrant (30 seconds to 1 minute).
7. Stirring, add the fish sauce and sugar, then add the coconut milk and bring to a boil.
8. Simmer until thickened slightly (about 2 minutes).
9. Add the turkey, stirring  (about 5 minutes).
10. Remove from the heat and stir in the basil and cilantro.
Serve over jasmine rice, garnished with cilantro sprigs.
Optional: Add more greens such as leftover peas, spinach, bok choy, celery or kale.

HAT2FOOD TIPS: If you don’t have fish sauce handy you can use anchovies. My mum always had fish paste in the frig. She bought it in a squeezable tube and kept it in the door of the frig. She would also keep anchovies in a small glass jar tucked away in the frig. They really come in handy. Hard boiled eggs with anchovies on toasted rye bread was a typical treat in our house.

Chocolate Chili Truffles ~ Holiday Gifts ~

Deliciously dark (not-decadent) “Chili” Truffles. This recipe hails from  “South Of The Border Down Mexico Way!”  Around Christmas time I start whipping up my holiday truffles.  Add 2-3 truffles into mini boxes. Decorate with festive ribbon or glittery Christmas stickers and you’re ready to spread some cheer! Friends and family like your truffles even more knowing that you made them yourself and added a spoonful of love to each one! 💖

INGREDIENTS

1 1/2 cups whole almonds
1 1/2 cups fresh dates(pitted)
1/2 cup (or more) cocoa powder
1 teaspoon cinnamon
1/2 teaspoon chili powder (Ancho, New Mexican, etc.)
1/4 teaspoon sea salt
1 teaspoon vanilla extract
pinch of cayenne pepper
chocolate (preferably couverture or chips or whatever you have for coating ) optional
INSTRUCTIONS
1. Pulse almonds in food processor until almost like almond butter. This will take several minutes.
2. Add the pitted dates and mix thoroughly.
3. Add the cocoa powder, cinnamon, salt, vanilla extract, chili powder and cayenne and process again until ingredients are thoroughly mixed.
4. Form mixture into bite sized balls.
5. Optionally coat with chocolate.
To do this, melt the chocolate in a double boiler or Bain Marie. Dip the balls into this mixture and leave to set on a piece of parchment. They can be placed in the refrigerator to set faster. Box these and give away as gifts or enjoy yourself.

Game Day Spicy Meatballs

These are a healthier alternative to the typical  game day feast of nachos, chips, wings and pizza. They are so tasty and will not last long.  Delicious and nutritious snacks!

INGREDIENTS

3 cloves garlic, minced
1 egg, whisked
3 tablespoons unseasoned whole-wheat bread crumbs
2 teaspoons Worcestershire sauce
1 teaspoon Hungarian or hot paprika
1/2 cup onion, finely diced
1 teaspoon chopped fresh oregano leaves, about 1 small sprig or 1/2 teaspoon dried oregano
1 tablespoon chopped fresh thyme leaves, about 5 sprigs or 1 1/2 teaspoons dried thyme
1 teaspoon sugar substitute
1 lemon, zest only
1/2 teaspoon Kosher salt
1/2 teaspoon freshly ground black pepper
1 tablespoon unsalted butter
1 tablespoon extra-virgin olive oil

INSTRUCTIONS:
1) In a large bowl thoroughly mix the chicken, garlic, egg, bread crumbs, Worcestershire, paprika, onion powder, oregano, thyme, brown sugar, lemon zest, salt and pepper in a bowl.
2) Gently mix in the chicken (to avoid any toughness in the meatballs) and form into mini meatballs, slightly smaller than a golf ball; it should make 28 to 30 meatballs.
3) Warm the butter and oil in a large pan over medium-high heat.
4) Transfer the meatballs to the pan and do not disturb for 3 minutes to brown well.
5) Turn, cooking another 3 minutes without disturbing.
6) Keep cooking until browned and cooked on all sides, but still juicy and plump with a spring to the touch.
7) Transfer to a paper towel-lined plate to drain.
Serve with cocktail skewers or toothpicks for game day!

img_4258Both chicken and turkey are a great alternative to beef when making meatballs and these meatballs are healthier than pizza, wings or chips for that game day snack!  These are also great for those who want to build their muscles to compete with or become  football players or just build a little bit of muscle like myself.

While turkey has a slight edge from a nutritional standpoint, the price of chicken is more stable year-round, and boneless, skinless cuts of turkey breast can be found easily at most grocery stores.  A 1-lb. serving of skinless, boneless chicken breast contains 135 calories per serving, which is 12 calories higher than the same serving of turkey. The ratio of protein to fat is also slightly lower than turkey with 25 g of protein and 3 g of fat per serving.

Amino Acid Profiles
Another important consideration is the amino acid profiles or each meat. Amino acids are the building blocks of proteins, and different amino acids have different effects on muscle gain. Specifically, the branched chain amino acids, or BCAAs — isoleucine, leucine and valine — are linked to optimal muscular growth and repair. Again, turkey is slightly superior to chicken in its content of BCAAs. One serving of turkey contains 1,420 mg of isoleucine, 2,176 mg of leucine and 1,451 mg of valine. A serving of chicken contains 1,230 mg of isoleucine, 2,073 mg of leucine and 1,297 mg of valine.
