Pickled Carrots and DUQQA (dukkah)

EGYPTIAN Duqqa ~DUKKAH

SPICE OF LIFE! Sesame seeds found on bagels and hamburger buns are now enhanced or “stepped up a notch” with this century old mixture called Duqqa adds protein, rich nuts and spices to make your taste buds sing. 🎵

There are as many recipes for DUKKAH as there are Egyptian cooks. I like the protein from nuts and seeds. Tonight, having rainbow trout that I will dredge in DUKKAH. Sesame seeds are a must. Mix hazel nuts, walnuts, pistachio nuts, and/or pine nuts with the classic almonds.

Egyptian Dukkah Recipe

INGREDIENTS

▢ Nuts: 3-4 tbsp each Hazelnuts, almonds and pistachios 
▢ Spices:
▢ 4 tbsp (1/4 cup)Sesame Seeds
▢ 1 tbsp Fennel Seeds
▢ 1 tsp cumin seeds (or powder)
▢ 1 tsp coriander
▢ 1 tsp red pepper flakes (optional)
▢ 1/2 tsp. kosher salt (I use Celtic Salt)

INSTRUCTIONS
Toast/roast the nuts in the oven at 350F. Toast the sesame seeds in the oven in a separate small baking sheet. Watch for doneness!!
Dukkah depends on the freshness of the ingredients. Typically the spices are used whole, then crushed.
Combine the nuts, seeds and spices in a bowl. Crush and blend with the classic mortar and petal, or a food processor.
Pulse the processor until the nuts are well crushed. Do not over process to a powder form.

ROASTING NUTS AND SEEDS

Attempted to toast in a dry skillet on the stove top ends up with a burnt exterior and completely raw, untoasted interior. I have burned my share. Using the oven to toast your nuts is ideal because an oven provides uniform, even heat, which means that the nuts are going to be toasted from the inside out.

Preheat oven to 350ºF. Line a baking sheet with parchment paper. Oven must be at a low temperature. Use an air fryer for convenience and speed. Cook the nuts only until they start to turn golden (a light brown) with parts still appearing raw. Your nose also tells you when they are done too.

Is Dukkah The Same As Za’atar?

I get asked this question a lot. The answer is: no. While Dukkah and Za’atar are two Middle Eastern blends that can be used similarly, they are clearly not the same in texture or flavor profile. DUKKAH is crunchy and granular. Za’atar , a finer blend, is a mixture of toasted wild thyme and sesame seeds along with sumac.

Pickled Carrot Presentation

INGREDIENTS

▢ 2 cups of pickled carrots (add zucchini + cucumber -optional)
▢ 1/4 cup fresh mint leaves (or basil)
▢ ½ cup of home made yogurt (see recipe) ~you decide how much per person)

INSTRUCTIONS/PRESENTATION
Add a large dollop of yogurt on your plate and spread it around
Place carrots (and zucchini) on top of the yogurt followed by fresh chopped mint or basil.
Finish with a sprinkling of DUKKAH on top of the vegetables with a drizzle of your favorite olive oil.

PICKLING PROCESS: Use a vegetable peeler to make carrot/zucchini/cucumber ribbons. Submerge veggie ribbons in a bowl with a mix of 1/2 apple cider vinegar and 1/2 water. Ready in one hour! Or, refrigerate overnight. I like adding pear ribbons. Tastes great. 🙂

FAST PICKLED CARROTS

You don’t have to roll your carrots and zucchini like I have done here. Alternate with carrot on the outside. Or place in jars randomly. These pickled veggies were placed in a large steel bowl marinating overnight and then placed in jars stored in the fridge for 1-2 weeks. You will use them up quickly. Hint: If you get peckish. Take a veggie roll from the jar and enjoy! Healthy snack!

Pickled Carrots 🥕 Is Good For Your Gut Health

PICKLED CARROTS offers vitamins, minerals, and antioxidants.They are low in calories and fat, making them a healthy snack option. The fermentation process involved in pickling carrots (added mustard seed, 1/2 water, 1/2 vinegar) creates beneficial bacteria that support gut health.Cooking carrots depletes nutrients. Consuming pickled carrots in moderation can aid in weight loss due to their high fiber content. Adding pickled carrots to your meals provides additional nutrients.

DUKKAH (duqqa) with hummus is enjoyed as a dip or sandwich spread. Add pickled veggies as a burger topper. Sprinkle the Dukkah directly on the burger, chicken or seafood.

Sprinkle Dukkah On Top Of Your Saurkraut/Carrot Side Dish!!

Add pickled carrots to sauerkraut. It softens the tanginess of the SAURKRAUT and adds good flavour. I also shred a raw potato to the sauerkraut and heat it up all together with the pickled carrots.(my German relatives recipe). OPTIONAL: serve with pork chops or sausages. 1 PROTEIN/Fat (sausage/port chops) plus 2 VEGGIES (carrot and cabbage).

Low Carbohydrate !!

Carrots are Complex carbs and Keto friendly. Very low carbohydrates. Carbs A cup (128g) of chopped raw carrots has 12.3 grams of carbohydrates, with 3.6 grams of fiber and 6.1 grams of natural sugars. Carrots are sweet! Almonds are not nuts they are classed as a stone fruit. Cashews are a fruit of the Cashew trees. As olive is a fruit too. The nuts you choose should come from a tree not in the ground(peanut).

All these nuts are 15-18 gm weight. Eating dukkah does not involve a lot of calories since it is sprinkled on food.

PISTACHIO /LIME Truffles

“Great Balls of Fire” 🔥 (Vegan, Paleo) – No Added Sugar

RECIPE
INGREDIENTS
2 cups pistachios
I cup pitted dates (Medjool dates)
A pinch of pink or sea salt
4 Organic Limes,  zest and juice of each lime.
DIRECTIONS
1. Mix  1 1/2 cups of the pistachios, salt and the dates in food processor until it becomes a ball. About 3 minutes.
2. Reserve 1/2 cup of the pistachios for the coating.
3. While this is mixing, zest the limes and then juice them.
4. Chop or grind the remaining 1/2 cup pistachios into tiny bits to be used for coating.
5. Break up the pistachio-date ball and add zest and juice of all key limes. Process until well combined.
6. Shape pistachio/date mixture into 18 bite size balls and then roll in chopped pistachio.
Store in the refrigerator for up to 1 month; ready for your guests and visitors. Store longer in your freezer.

VARIATIONS

  • Dip 1/2 of the pistachio treat in sugar free ganache. (vegan dark chocolate)
  • Substitute with different nuts and tangerines (instead of limes).
  • Add a cherry, dried apricot, dried cranberries or anything you like inside your truffle.

You can add anything you like to your Holiday Truffles. Add chia seeds, hemp seeds, nutritional yeast, figs or chili powder. Apricots will brighten up your festive season! Add your favorite blends. Mix and match!

Almond Cookies -Keto Friendly

SIMPLY SWEET
This almond cookie is an explosion of flavour,  yet shockingly simple to make. Gluten free. Keto – friendly and does not spike your blood glucose levels. This is my all time favourite  ‘cookie’.  You may be hooked like I was, with your very first bite.  The vanilla extract makes these gems extra good!

INGREDIENTS
2-3 Egg whites
1/2 tsp. vanilla extract
1/4 cup of sweetener  ( Monk fruit )
3 cups of sliced blanched almonds
a pinch of salt

INSTRUCTIONS

  1. Preheat oven to 350F
  2. Mix egg whites with a fork. Add sweetener, salt and vanilla.  Mix again.  Toss in almonds and mix. (check your egg white consistency here)
  3. Spoon and flatten cookie mixture  on a silicone sheet or parchment or on a cookie sheet.
  4. Bake 20 minute – to a media brown colour
  5. If bottom still soft and sticky  ..turn over bottom side up and put back in the oven
  6. Turn off oven ..let cookies sit 5-10 minutes to dry out.

VARIATIONS
Dip cookie in dark or light chocolate after baking. Flip chocolate side up. Let cool  (see below).

Egg whites vary in size.  Make sure you have enough ‘egg white’ to have a thick consistency when blending – well coated ( sort of gooey). If it looks dry, you may have to add another egg white . Beat the ‘additional’ egg white separately before you add it to your cookie mix. Err on more egg white. Crumble the cookie on yogurt, hot, morning oatmeal, ice cream, salad or cooked green beans. There are more ideas as you  might guess. The ingredients are healthy and you can dress up any meal with healthy almonds.

DID YOU KNOW?
Almonds are not a true nut. It is a seed or pit similar to a peach or olives. My uncle, who reached his 100th birthday,  would enjoy six almonds daily for good health.  Did you know Bill Gates’  frequently snacks on  ‘nuts’.  I’m sure the almond squeaked its way in the mix.   Monk fruit is the trending sugar substitute,  some say no aftertaste. There are various Monk fruits to buy  with varying sweetness. Investigate them before using in a recipe. Monk fruit  toots a higher sweetness level than sugar. Tasting is believing. Swerve is another emerging substitute for sugar you may want to try.

A study published in the Journal of the American Dietetic Association suggests that consuming almonds increases vitamin E levels    Vitamin E is a powerful antioxidant that defends your cells against damage on a daily basis and prevents artery-clogging oxidation and also lowers cholesterol levels. Almonds have a  significant  increase the amount of antioxidants in the bloodstream. Blood flow is improved along with reduced blood pressure.

2 tablespoons unsalted butter or coconut oil
3 shallots
2 cloves garlic, minced
1 tablespoon fresh ginger root, grated
1 teaspoon fresh turmeric or 1/2 teaspoon turmeric powder
1 teaspoon curry powder
1 1/2 cups frozen baby green peas
1 bunch broccoli about 1 pound, trimmed and chopped
3 cups chicken stock
2 tablespoons toasted sliced almonds
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper

DIRECTIONS
1) Melt butter in a large saucepan. Add shallots and saute for about 5 minutes until translucent. Add the minced garlic, ginger, and turmeric. Cook until tender and fragrant. Add curry powder, salt and pepper and cook over low heat for a few minutes.

2) Add broccoli and combine well. Cook for a few minutes and add chicken stock. Bring to a boil and reduce heat until medium. Cook for 15 to 20 minutes until the broccoli is tender.

Add the frozen peas and cook for a few minutes only so that the soup will maintain it’s bright green colour.

3) Puree the soup in a blender or food processor and add salt to taste if required.
Serve hot sprinkled with almonds and optionally sour cream. This can be served cold as well.

Truffles – No Sugar Added

A few weeks ago, I was chatting with my hairdresser. She was concerned about the sugar that her adult sons were eating and asked me if I had any ideas I could recommend to satisfy their sweet tooth. The answer was TRUFFLES, made with dates and nuts. Truffles are healthy, fast and easy to make for a burst of energy!

TASTY TRUFFLES
My neighbour loves chocolate and loves sweets but she gets headaches for days afterwards. I started thinking about this and kept my mind and my eyes open for a solution. I did some testing with organic dates and almonds and came up with these treats with great success!..

CHOCOLATE RASPBERRY TRUFFLES
RECIPE
Ingredients
1 cup soft pitted dates
1 cup raw almonds
1/2 cup unsweetened cocoa powder
1 tsp natural raspberry flavour*
1 tsp natural vanilla extract
pinch salt (optional)

Directions
Add dates and almonds to a food processor fitted with a steel blade and process until they come together into a ball. Break up ball and add cocoa powder, natural raspberry flavour vanilla extract and salt. Process until all ingredients have been combined and form into a large sticky ball again. Roll into 20 small balls and dust with cocoa powder. Store in refrigerator for up to 2 weeks. They will store longer in the freezer. My neighbour  tried them and did she get a headache?  You guessed it!  NO!
Added pizazz – Sprinkled edible gold leaf on your truffles. Or – add organic lime zest on top of the truffles -right before serving for that extra tang.

1T organic matcha green tea powder
1 T unsweetened almond milk
1 tsp vanilla extract
pinch salt (optional)

Directions

Break up ball and add cocoa powder, matcha powder, almond milk, vanilla extract and pinch salt. Process until all ingredients have been combined and form into a large sticky ball again. Roll into 20 small balls and dust with more matcha powder.
Store in refrigerator for up to 2 weeks or longer in freezer.
